  1. Lay your sweet potato on its side.
  2. Cut off both ends.
  3. Stand it upright on a flat end.
  4. Cut down through the middle to halve.
  5. Lay the halves on the flat side and slice lengthwise making thin planks.
  6. Cut each plank into thin strips a Julienne!
